This looks SO SO yummy! You could substitute milk with almond milk and use vegan cheese if you want a vegan option. Either way, what a beautiful dish and a great way to increase those orange veggies in your life.
Apricot Energy Bars
12 dried apricots
1/3 cup water
1/3 cup almond butter
1/2 tsp vanilla
1/8 tsp himalayan pink salt
4 scoops Arbonne Protein Booster
1/2 tsp cinnamon
1/2 tsp nutmeg
2 cups gluten free oats
Blend 6 apricots, water, nut butter, vanilla, and salt in blender or food processor 1 minute until smooth. Add protein booster, cinnamon and nutmeg. Finely chop remaining apricots and place in mixing bowl with oats. Hand mix all ingredients until smooth. Place in an 8×8 baking dish and freeze 45 min! Voila ~ your kids will love them and so will YOU!

Last weekend I was in Vegas for Arbonne’s global training conference. Such FUN! So many good memories made! Got to hang out with the best of the best and hear training from world class leaders.
One of our leaders Dianna Herrin gave this awesome and inspiring talk. She shared that her yoga teacher calls that voice in our heads “Susan” (I apologize to you all who’s name is actually Susan.)
She spoke about putting “Susan” in the back seat of the car. I took it one step further and told her to get out of the car.
Over dinner on Friday night, my roommate (Dee who is a kick in the pants) made a HILARIOUS comment and said “Shut up Susan!” when someone made a comment that was not serving them. It was FUNNY, but it was a realization that we don’t have to listen to that silly voice who tells us we can’t do hard things or we can’t be successful!
So when you are running and feel like quitting but literally and figuratively tell “Susan” to shut up and get out of the car and then you just GO!

I have been packing and preparing and I am READY. Just a day and a half of nannying stand between me and my flight!

Chicken Quesadillas with Guacamole
Brown Rice Tortillas
2 Chicken Breasts
2 tbsp Olive Oil
1 Red Onion
Handful of Spinach
I started by roasting my chicken in the oven (or you can buy a rotisserie chicken.)Here is how I do it: I take a chicken breast (1 full breast or 2 halves) and spread a little olive oil on the breast. Then, I sprinkle garlic powder, salt, pepper, and cumin. I then bake it in a 350 degree oven for 45 mins. It always comes out flavorful and juicy.
I then caramelized the red onion with garlic and threw in some spinach. I added that to the brown rice tortilla and grilled it up on the griddle.
OH MY GOODNESS….so good! I was really afraid of the Brown Rice Tortilla. I had heard a few bad reviews. These are stinkin’ fantastic….at least when they are grilled.
