Last night I was craving something yummy for dinner so orange chicken and coconut rice it was.
- 1 tsp Garlic powder
- 1 inch Ginger
- 1 Orange
Baking & Spices
- 1/2 tsp Red pepper flakes
- 1 tsp Salt
- 1 tbsp Tapioca starch
Oils & Vinegars
- 2 tbsp Sesame oil, toasted
Nuts & Seeds
- 1/3 cup Coconut amnios
- Sprinkle salt on chicken and stir to evenly coat.
- In a large skillet over medium-high heat, add the sesame oil and chicken.
- Cook for about 5 minutes until mostly cooked through.
- While that is cooking, in a small bowl, combine orange zest and juice, coconut aminos, ginger,tomato paste, honey, red pepper, and garlic powder. Stir as best you can with a spoon.
- Pour over chicken and stir to evenly coat.
- Cook for 5-10 minutes or until chicken is fully cooked through.
- Add tapioca starch if you want the sauce thicker. Stir it in and cook for a couple minutes for it to thicken.
- Serve over rice of your choice (cauliflower rice would make it 100% paleo 😛 )
- 1 cup rice (white or brown)
- 2 cups coconut milk
- 1 tsp coconut oil
Make rice according to cooking instructions just substitute the coconut milk for the water.
Chicken Quesadillas with Guacamole
Brown Rice Tortillas
2 Chicken Breasts
2 tbsp Olive Oil
1 Red Onion
Handful of Spinach
I started by roasting my chicken in the oven (or you can buy a rotisserie chicken.)Here is how I do it: I take a chicken breast (1 full breast or 2 halves) and spread a little olive oil on the breast. Then, I sprinkle garlic powder, salt, pepper, and cumin. I then bake it in a 350 degree oven for 45 mins. It always comes out flavorful and juicy.
I then caramelized the red onion with garlic and threw in some spinach. I added that to the brown rice tortilla and grilled it up on the griddle.
OH MY GOODNESS….so good! I was really afraid of the Brown Rice Tortilla. I had heard a few bad reviews. These are stinkin’ fantastic….at least when they are grilled.
What a fun filled week! I launched my life coaching business very successfully I might add, worked my Arbonne business and made some steps towards my future of full time self-employment!
Friday afternoon I spent working with Paige at Scout in SLO. I left her house saying “Ill see you next week” knowing I would see her again in about an hour for her surprise birthday dinner at Mason’s Bar and Grill in Arroyo Grande.
She was so surprised!
I had chicken pot pie served in a baked potato! So yummy! We all shared a lava cake at the end of the night!
Saturday was a quiet day and family dinner!
Sunday morning I got in a hike and went home and cleaned the house top to bottom while listening to Christmas music 🙂
(I even got my car vacuumed out)
Sunday afternoon I napped and grocery shopped for the week. I wanted to make a yummy egg bake for my lunches this week.
We ran the groceries home and met with Andrew’s friend Brad for a yummy BBQ dinner at Dickies. So delicious!
Came home and food prepped for the week and enjoyed some quite time with Andrew before heading off to a house sitting job.
I woke up with my tummy feeling yucky so I packed some strawberries and a granola bar for later in the day.
Lunch was sweet potato, ham, & cucumber
I had a wild afternoon of appointments and friend time.
I met my new friend Rachel at Starbucks and had a hot chocolate with coconut milk. …so yummy
Got home at 7 & threw on some beef stew. Time to do some grocery shopping 😛

I LOVE weekends!
Saturday I got to hike with Julie and Rocky in the morning. We had to go early as it has been HOT around here the past few weeks.
Saturday evening I got a hot date with this guy.
He hasn’t felt good lately (aweful mouth infection) so Im thankful he took me out despite not feeling well.
Our DELICIOUS meal from Olive Garden. I had gluten free alfredo and the potato soup and he had ravioli with red sauce.
Afterwards we went to an event and chatted with some friends afterwards. Nice to catch up!
Sunday morning another hike for me and then grocery shopping. Does anyone else grocery shop after moving/exercising? I forgot how sweaty I was 😛
Got home and made a bunch of banana bread to use up a million and one bananas and started a tortellini soup for dinner.

Banana bread is a hit. Already half a loaf is gone 🙂

Happy Monday ya’al! Had another great weekend.
Friday was LONG. I nannyed from 7am-10pm! Friday night I took the two boys I was watching to see The Minion movie at the local budget theater. $3.50 a ticket is an AWESOME deal.
Saturday morning I met up with the meetup girls to walk the Bob Jones Trail -6 miles from land to sea trail in Avila CA
It was sucha beautiful day and chatting makes the miles fly by. On our way back some of us stopped at Woodstone Market for lunch. I had a yummy turkey wrap with bacon and avocado
Got home around 1:30 a took a nap!
Saturday evening we got Chinese take out and went to Andrew’s mom’s for dinner. So fun! I had my typical egg roll and fried rice 🙂
Sunday morning woke up to clouds and rain!! Yay! We need rain so desperately.
Got in a 50 minute hike/walk with my friend Julie and her dog Rocky.
Came home and heated up some left over fried rice.
Sunday afternoon I caught up on life, napped, and prepped for the week ahead.

I had yesterday (and today) off from nannying. Can just say it was glorious to sleep in until 7!!!
I did my hour of personal growth and then made myself a shake
Mango, strawberry, turmeric, water and Arbonne vanilla protein powder
Then I headed off to an appointment with my financial advisor and to run some errands.
Lunch was at 11:30
Broccoli and cheese quiche and half a yam 😀
Mid afternoon after a NAP I had two fitchews
One caramel and one coco cabana
Dinner was yummy chicken and pretzle roll sandwich’s at a networking event! I also had a few bites of a broccoli salad, BBQ chips and a yummy chocolate chip cookie!
A great day of rest, yummy food and networking
